A Yummy Twist on a Classic Treat
These delicious Funfetti Cake Batter Rice Krispie Treats are packed with oooey gooey marshmallows and colorful sprinkles making them the perfect birthday party snack or school birthday treat. This rice krispie recipe is so simple to make in just a few minutes with a couple of basic ingredients including crispy rice cereal, marshmallows, dry cake mix, butter, and rainbow sprinkles. Make this easy homemade dessert recipe even better with a few spoonfuls of marshmallow creme for an extra delectable birthday treat.
I love rice krispie treats. They’re chewy, crunchy, and sweet all at the same time. Through the years I’ve experimented a lot with the classic rice krispie recipe and I think that Cake Batter Rice Krispies are my absolute favorite. My secret ingredient is the marshmallow creme. As if a whole bag of marshmallows wasn’t enough, I add a couple of spoon fulls of the Jet-Puffed marshmallow creme to really take this sweet recipe over the top. This is truly the best no bake sweet treat that everyone loves.
Ingredients – Hint You Need Cake Mix 😜
- 6 cups crispy rice cereal
- 10 oz bag of marshmallows
- 6 tbsp of butter
- rainbow sprinkles (I used an entire 3 oz container)
- 2/3 cup dry cake mix (I used Funfetti but white or yellow cake mix will work too)
- Optional – 2-3 tbsp of marshmallow creme
Cake Batter Rice Krispie Treat Recipe
Step 1 Melt butter in a pan on low heat. Once butter is melted, add marshmallows and if desired marshmallow creme. Make sure to stir constantly so that the marshmallows melt evenly and do not burn. This process will take about 5 minutes.
Step 2 Remove the melted marshmallows from the heat and add 2/3 cup of funfetti cake mix. Remember you can also use white or yellow cake mix if you would like! Stir gently until the cake mix is fully combined. But work quickly because the marshmallow mix will begin to stiffen as it cools.
Step 3 In a large bowl add 6 cups of crispy rice cereal and the marshmallow/cake mix mixture. Add desired amount of sprinkles. I used about 3/4 of a bottle in the Rice Krispie treats and reserved the remainder to sprinkle on top. Stir until the cereal is completely coated.
Step 4 Butter a 9×13 baking dish and pour the cake batter rice krispie treats into the pan. Use a spatula sprayed with cooking spray and press down these treats evenly in the pan. Top with remaining sprinkles and enjoy! This truly is one of my favorite homemade desserts ever!
My kids love to eat this no bake treat while it’s still warm but if you’re looking to serve at a party, let cool for 30 minutes before cutting into squares. Easy and fun birthday snack for kids!
Helpful Tips
- Make sure to melt the marshmallows on low heat to prevent them from getting too stiff. If you are using the optional marshmallow creme, add when your regular marshmallows are about 1/2 way melted.
- Butter your baking dish to make removing the treats from the pan easier. I also like to butter my hands when I’m pressing the Rice Krispies into the pan. This keeps everything from sticking to my hands and my hands get a moisturizing treatment at the same time 😜.
- Make sure to store these delicious cake batter rice krispies in an air tight container for 2-3 days. If your container is not air tight, these treats will get stale very quickly.
