How to make a yummy and easy dinner in the oven that your kids will love!
Who loves corn dogs but hates to fry food in your house? These Mini Corn Dog Muffins taste just like State Fair Corn Dogs and are so simple to make in your oven. With only 5 ingredients you can make an easy and fun dinner that your kids will absolutely love! Pair this recipe with your kid’s favorite veggie and you’re sure to have a hit dinner on your hands! One of my favorite things to do is go to the fair and eat everything. Fried Oreos – yes, Fried Butter – sure, Fried Corn Dogs – ABSOLUTELY MY FAVORITE! But I always feel so terrible after eating all that fried food. So, I set out to find a simple yet yummy way to recreate that Classic Corn Dog Recipe and guys I think I’ve done it! With a box of corn bread mix and some sliced hot dogs you too will be able to make the best Mini Corn Dogs in your oven!

Ingredients For The Best Ever Corn Dog Mini Muffins
- 4-6 Hot Dogs
- 1 Box of Cornbread Mix and Ingredients Listed on Cornbread Box
- Mini Muffin Pan
How To Make The Greatest Mini Corn Dogs Ever!
1. Start by preheating your oven to 375 degrees and greasing your mini muffin tray with cooking spray or butter. 2. Combine your cornbread mix with the ingredients listed on the back of the box. My favorite brand is Krusteaz Honey Cornbread because it makes this recipe a little sweet just like real corn dogs! For this brand of cornbread, I used a 1/2 cup of milk, 1/3 cup of melted butter, and 1 egg. Your recipe may vary slightly depending on your cornbread mix brand of choice! 3. Cut each hot dog into 4-5 equal pieces. You want your hot dog pieces to be as tall as your muffin tin. 4. Spoon the prepared cornbread mix into your greased mini muffin pan. Fill each muffin cup about halfway. If you fill it any fuller it will overflow in the oven (which I found out the hard way). 5. Push one of the cut hotdog pieces into the middle of each muffin cup. Make sure to push the hot dog all the way to the bottom of the cornbread mix. 6. Bake at 375 degrees for 10-12 minutes or until the edges of the cornbread begins to brown. Let cool for 2-3 minutes and pop these yummy corn dog muffins out with a spoon and enjoy!
Helpful Tips
- When freezing make sure to squeeze as much of the air out of your freezer bag as possible to prevent freezer burn! Mini Corn Dog Muffins are good in the freezer for 2-3 months!
- Corn Dog Mini Muffins are great for school lunches. You can make this recipe the night before or pull a few out of the freezer and let them thaw in the refrigerator overnight. Perfect school lunch idea!

- Make this recipe a bit healthier by substituting turkey hot dogs.
But Can You Freeze Them?!
I know what you’re thinking. Ok so we’ve made 24 (or more) mini corn dogs, now what? Well, my kids devoured a solid dozen of these in one sitting. These corn dog muffins will stay good for 2-3 days in the refrigerator BUT you can also freeze them. Since I was writing this post, I ended up making this amazing mini corn dog recipe 3 or 4 times so I could get all the pictures I needed. That being said, I ended up with a ton of delicious Mini Corn Dog Muffins so I popped them in a freezer bag and into the freezer they went. Whenever my kids or I get a craving for corn dogs, I take a few out and warm them in my air fryer! Easy Peasy! Easy, quick and healthy dinner idea for busy parents. Your kids will love this recipe so much. I love that I can make this ahead of time and simply rewarm these yummy mini corn dog muffins on busy weeknights. Makes my life as a busy mom so much easier! Add some broccoli as a side and you’ve got the perfect school night dinner in 20 minutes or less!
